This is the pumpkin roll I made for Thanksgiving dessert. Yes, there is pumpkin pie....but we sort of cut into it already to have a little sample.
We have the turkey all prepared, and he is in the pan ready for roasting. All of the chopping, slicing, dicing and mixing is finished. There are some things that need to be cooked right before dinner, but for the most part all that is left is the baking and the eating.
Here is a recipe for Make Ahead Mashed Potatoes that I make every year, and it is always a bit hit. The best part is that all of the preparation can be done before company arrives, and all you have to do is heat in the microwave.
Make Ahead Mashed Potatoes
3 pounds potatoes
1 Cup sour cream
4 ounces Philadelphia Cream Cheese
1/4 Cup milk
Dash of salt
Bring potatoes to a boil on high heat on stove. Reduce to medium low heat and cook for 15 minutes. Drain and beat with mixer. Add sour cream, cream cheese and milk and mash. Cover with plastic wrap and refrigerate. Before serving, vent plastic wrap by piercing with a fork. Microwave on High 6-8 minutes before serving. Then stir and microwave uncovered an additional 2-3 minutes.

I love pumpkin rolls, I've been making and freezing them for the holidays, I've never froze them before so I hope they turn out okay.
